Our Pecoraro Aceto Balsamico 9, which is produced using the traditional method, matures in five different barrels: Oak, acacia, mulberry, chestnut and cherry blend together after nine years to create this wonderful aroma of our gourmet favorite. This special arrangement is called a "barrel battery", with each barrel being specially made for our production by a cooper. The perfect taste of our 9-year-old is achieved through a very elaborate annual decanting process.
